The third annual Dan’s Taste of Two Forks, hosted this year by Bobby Flay, will once again offer a night of find food, wondrous Long Island wines and a celebration of local fare from the Hamptons and the North Fork. As he looks forward to his third time at the event, Chef Noah Schwartz of Noah’s in Greenport talks cold Thai food, perfect drinks for hot summer nights, his love affair with food and more.

What are you most looking forward to at Dan’s Taste of Two Forks?

Serving the masses and feeding the people. It’s a fun group and it’s a big rush to feed that many people at once and it’s a new group to us since we’re coming down to the South Fork from the North Fork.

Right now, squash blossoms and asparagus. It’s super fresh right now. It’s the beginning of spring into summer. We’re transitioning into green, floral things.

Food that defines summer on Long Island…

Corn and tomatoes. But corn first.

The perfect drink for a summer night…

For me it’s the peach jalapeno martini. It’s refreshing with a little spice.

Name three people in history you’d love to cook for…

George Washington, Mahatma Gandhi and the Lord Buddha for the company, not the cuisine.

If you had two forks in your hands right now, what would you like to stick them in?

One would be a nice, juicy steak and two would be into my sous chef so he gets his ass in gear.
