Dan's Taste of Two Forks Countdown: Seth Levine of Georgica
The third annual Dan’s Taste of Two Forks, the food and wine event in the Hamptons, is arrives in Bridgehampton on Saturday, July 13, and Georgica Restaurant and Lounge chef Seth Levine is already looking forward to returning to the big night.
“Taste of Two forks allows everyone to experience each Hampton restaurant under one tent,” Levine says. “I love getting to see all my colleagues and fellow restaurateurs, as us chefs don’t get out to the other restaurants as much as we would like. Each year the event becomes bigger and better.”
As we all look forward to the dish Levine will be sharing at Dan’s Taste of Two Forks—Heirloom Tomato and Watermelon Tower Athena, Vinaigrette, Feta and Micro Basil—we caught up with the chef to talk Long Island wine, wondrous dining destinations, most memorable meals and more.
Long Island Wine Country is celebrating 40 years this summer. What’s your take on the evolution of local wines?
Long Island wines are becoming more and more respected with each year. We carry many local wines at Georgica, not just to support our surrounding vineyards but because they are that good to make our menu
What are your top three cities, anywhere in the world, for gastronomical indulgence?
I’m partial to Florence, Italy—not only because I studied there, but the cuisine is truly amazing. New York City—I reside there and truly believe it has the most to offer. And of course, Wainscott. Well, Georgica is there!!

Love my new soda steamer, caviar, my chef knife, family, friends
What is the most interesting thing you’ve ever had on the grill?
Recently, grilled tongue burgers. Delicious!

Something light and refreshing, like cucumber mint iced tea

My grandmother Evelyn—she passed away before she could see me become successful in my career but inspired me in so many ways. Eric Ripert—Although I have cooked for him before at Georgica, he’s one of the most down to earth nicest guys around. I respect what he has given to the culinary world greatly. Julia Child—Just to hear that iconic voice would make me smile

What’s your favorite thing to cook—ahhhhhhhhhhh. Please stop, people….I would open a restaurant and just serve that one thing if I had a favorite.
