If you look inside Chef Todd Jacobs’ refrigerator right now, as he prepares to join the who’s who of East End chefs at Dan’s Taste of Two Forks, you’ll find “lots of fresh greens and vegetables, lemons, lettuce,” he reveals—exactly what you’d expect from the man helming the kitchen at the new Fresh Hamptons in Bridgehampton. But you’ll also find “a bunch of different hot sauces mustards and condiments—some of them too old—wine, beer, champagne,” he adds, along with “leftovers from the restaurant (sweet potatoes, chicken, salmon, sautéed greens), milk, butter, aloe juice, yogurt, strawberries, blueberries—did I mention that Lillian and I have six kids?”

The world ends tomorrow. Your last meal would be… A great big barbeque with plenty of raw vegan foods and pork, beef and chicken too—and more importantly, my amazing family!
What is your favorite local ingredient? Depends what day it is. Right now, I can’t wait for tomatoes, corn, and striped bass. Oh, don’t forget eggplant. Eggplant more than any other vegetable when garden fresh is uniquely different.
What is your guilty pleasure these days? Ice cream and chocolate chip cookies
What’s great about being part of the cuisine culture on the East End? The people who are dedicated to excellence in their craft and the incredible access to the tastiest and most nutritious foods available
What do you consider a chef’s most underrated virtue? The ability to solve any problem—the show must go on!
