Dan's Harvest East End Spotlight: Chef Robby Beaver of The Frisky Oyster

The Frisky Oyster lives up to its name, with a creative and delicious menu that will satiate every seafood fan. We spoke with Chef Robby Beaver about local ingredients, what local wines pair well with the menu and more.

What are you most looking forward to about being part of Dan’s Harvest East End this year?
I’m looking forward to being surrounded with a group of chefs who are equally enthusiastic about showcasing local, sustainable food.

One food or dish that everyone should try at least once in life:
Oysters, of course. I change a lot of minds with my Oysters Friskafella.

What is the best pairing of food and East End wine?
Oysters Friskafella with Sparkling Pointe’s Brut Seduction.

If you were to eat at your restaurant as a guest, what would you order?
The 34 oz. Prime Tomahawk rib eye steak, frites with parmesan truffle fries and a “Beaver Fever.”

The perfect drink for a summer night:
My favorite is the “Ward,” which has Hendricks gin, cucumber puree, fresh mint, lime juice and Elderflower.

Food that defines summer on the East End:
I’d say corn—corn salad, corn soup, corn on the cob, succotash…

Favorite East End-inspired meal?
Crescent Farms duck breast with creamy corn pudding, KK’s The Farm’s baby arugula and McCall Vineyard’s Pinot Noir/bing cherry reduction.

What is your favorite local ingredient?
Oysters, striped bass, Sep’s corn, anything from KK’s The Farm.

The trio of Dan’s Taste of Summer Events wraps up with Dan’s Harvest East End, the food-and-wine classic, on August 22. Hosted by celebrity chef Geoffrey Zakarian, the event will showcase more than 40 East End winemakers, the dishes of 30-plus top regional chefs and purveyors.
