Satur Farms' Eberhard Müller Brings All the Right Ingredients
Located in Cutchogue, Satur Farms is owned by chef Eberhard Müller and wife Paulette Satur. Since purchasing the farm in 1997, the duo have been dedicated to growing the finest vegetables and culinary ingredients. Chef Müller will showcase his culinary prowess at Dan’s Harvest East End, held on Saturday, August 22, at McCall Vineyard and Ranch in Cutchogue. Here, he dishes on what it’s like to be a part of the culinary culture of the East End.

One food or dish that everyone should try at least once in life:
A freshly dug Long Island Yukon Gold potato, baked within minutes of harvest, nothing added. I call that bliss.
What is the best pairing of food and East End wine?
Oysters from our local waters and sauvignon blanc
The trio of Dan’s Taste of Summer Events wraps up with Dan’s Harvest East End, the food-and-wine classic, on August 22. Describe the relationship between East End wine and the agriculture, aquaculture and overall East End culinary culture?
The food culture on the East End is phenomenal, as evidenced by the bounty and excellent food and wine pairings at this event. Satur Farms works with wineries and other farms to promote farm products, and we enjoy stopping at wineries and breweries after our workday, having a glass and a light dinner from the local food trucks.
The perfect drink for a summer night:
A lightly chilled glass of locally-grown white or rose, or sparkling
Food that defines summer on the East End:
Light, not labored, with plenty of salad greens and vegetables and local seafood.
Favorite East End-inspired meal?
Grilled sea bass, with tomatoes off the vine, local corn, wild arugula, herbs.
What is your favorite local ingredient?
Lemon verbena–infused simple syrup used as a base for a cool fruit compote
What is your favorite aspect of being part of the culinary culture on the East End?
That we don’t have to travel for perfect ingredients.
When you hear the phrase “local,” what comes to mind?
Fresh and flavorful food that can be enjoyed in the midst of beautiful farmland.
