Forbidden Black Rice With Seared Maple Tofu
Ingredients (serves 4)
2 c forbidden black rice
4 qt water
2 14-oz packages of firm tofu
2 tsp maple syrup
1 Tbsp soy sauce
1 tsp hoisin sauce
1 Tbsp grapeseed oil
1 small knob of butter
1 tsp lemon zest
1 pinch of salt
Directions
Begin by placing the forbidden rice into four quarts of water in a large stock pot and boil on medium high for about 15 minutes, or until the rice is cooked. When the rice is done, strain it through a colander and rinse with cold water.
Pat the tofu dry with a paper towel and cube it into one-inch squares, then heat up a nonstick pan over high heat. Add the grapeseed oil, and sear the tofu about 30 seconds on each side. While you are searing the tofu, mix together the hoisin sauce, soy sauce, maple syrup, and lemon zest. Then toss the tofu in the glaze and cream a small knob of butter into your rice. Plate and enjoy.
