Cinnamon French Toast With Bacon & Poached Apple
Ingredients (serves 4)
4 pieces thick cut country oat bread
1/2 c granulated sugar
6 eggs
1/4 c cream
3/4 c confectioners’ sugar
4 apples, peeled and sliced
1/4 c pineapple juice
1/2 c maple syrup
1 Tbsp vanilla extract
2 Tbsp cinnamon
8 thick cut slices of bacon
4 Tbsp butter
Directions
Begin by setting an oven to 400 degrees. While it heats, peel and slice the apples. In a saucepot, add the sliced apples, pineapple juice, granulated sugar, and one cup of water. Cook over medium-high heat for about 30 minutes.
Once the apples are on and the oven is hot, lay out the eight slices of bacon on a sheet tray lined with parchment paper. Cook the bacon for 10 minutes or until crispy.
Now begin to heat two large sauté pans over medium-low heat. At the same time, crack the eggs into a bowl and add the cream, vanilla extract, cinnamon, and half-cup confectioners’ sugar and whisk together. Next, add two tablespoons of butter to each sauté pan. Dip each slice of bread into the egg mixture and cook in the butter on each side for about four minutes or until golden brown on each side.
While the toast is cooking on medium heat, check the apples. When they are soft and the liquid is beginning to reduce, take them off the heat and mix in the maple syrup. When the toast is ready, spoon some of the poached apples and the apple syrup over the toast, top with a couple pieces of crispy bacon and a dusting of powdered sugar, and enjoy.
